The love of cake decorating came to me in an unconventional way; here is my story. While in high school I loved math and decided to study Business and Enterprise Development at Ryerson University, graduating with a Business Commerce Degree. While in University, I worked in mortgage securitization and started to work in this same field after graduation. I enjoyed my job but felt the need for a creative outlet so I started taking non-business classes.
I took flower arranging courses which gave me a fantasic lesson in flower composition. I always enjoyed baking and while planning a renewal of vows for my parents' 25th wedding anniversary I was determined to make them a "wedding" cake. I took every available course through community centres and Golda's Kitchen, falling in love with cake decorating and feeling the need to learn more. I wanted to learn from the best, which lead me to Bonnie Gordon, who has been a wonderful mentor to me. I also attended the ICES (International Cake Exploration Society) annual meeting in Dallas Texas taking more courses to perfect my craft.
I always loved experimenting and trying new techniques when creating cakes. These experiments would often make people question if what they saw in front of them is in fact a cake, or rather a sculpture that shouldn't be touched.
Cake decorating is where art meets architecture, but it has to taste great or all the beauty is ruined. This is why I believe in using only the best ingredients in my cakes; this is truly the secret of my recipes.
